Tofu Veggie Summer Rolls

These fresh spring rolls are the perfect light meal for summer! They are packed with fresh veggies and tofu, paired with a delicious peanut sauce!

Tofu Veggie Summer Rolls Recipe | 2 Servings (4 Rolls)

Ingredients

Rolls

- rice papers

- extra firm tofu sliced

- instant rice noodles

- lettuce of choice

- red cabbage thinly sliced

- cucumber thinly sliced

- carrot thinly sliced

- fresh basil

Peanut Sauce

- 4-6 tbsp PB2 Powder

- 2 tbsp tamari or soy sauce

- 2 tbsp hot sauce (to taste)

- 1tbsp lime juice

- 1 tbsp maple syrup

- 1 tsp sesame oil

- water till desired thickness

- pinch of salt

Directions

1. Thinly slice your veggies and tofu

2. Prep the rice noodles per the package

3. Place the rice paper in a shallow bowl of water for a few seconds until pliable (about 3 seconds), lay on a flat surface and fill with your veggies. Roll the sides in first then fold the top and bottom, securing well (but not too tight)

4. Repeat process until your fillings are used up

5. Make the peanut sauce by combining all of the ingredients, adding enough water to your desired thickness and stirring until well combined

6. Top the sauce with some crushed peanuts for extra crunch, dip your rolls in the peanut sauce and enjoy!
