Veggie Quiche

This recipe is SO delicious and really easy to make! Quiche is traditionally made with eggs and cheese, but eggs and cheese are not very healthy so I have made a HEALTHY vegan quiche. It is packed with protein from the Tofu, Soy milk and Chickpea Flour! It's also filled with delicious veggies which can be interchanged for your preferences!

Veggie Quiche Recipe | 9 Servings

Ingredients

Quiche Mixture:

- 1 block extra or super firm tofu

- 1 cup soy milk, unsweetened

- 1 cup chickpea flour

- 2 tbsp nutritional yeast

- 1 tsp baking powder

- 1 tsp minced garlic

- 1 tsp cornstarch

- 1/2 tsp garlic powder

- 1/2 tsp onion powder

- 1/4 tsp black salt

- 1/4 tsp smoked paprika

- cracked black pepper to taste

Veggie Add-Ins:

- 1 head of broccoli

- 1 small zucchini

- 1 red bell pepper

- 6 small portobello mushrooms

- 1/2 onion

Directions:

1. Preheat oven to 425 degrees Fahrenheit

2. Dice all the veggies and sauté over medium-high heat stirring constantly for about mins

3. Add veggies to strainer to release extra water

4. Prepare the quiche mixture, by first blending the tofu with the soy milk until smooth

5. Add the remaining ingredients and blend until smooth, add 1 tbsp of water in increments if needed to help it blend

6. Spread a thin layer of quiche mixture to the bottom of a nonstick pan, then add the veggies and the rest of the mixture

7. Stir to coat veggies well then spread evenly

8. Bake in the oven for 45 minutes, or until the top is nice and golden brown

9. Allow to cool for at least 15 minutes, then slice and serve!
