Tofu Scramble

This Tofu Scramble recipe is so special because it uses a secret ingredient, oh and did I mention, it's vegan and whole food plant based and no oil! It is very easy to make and (in my opinion) is the the best one out there! Give it a try, you won't regret it, see below!

Tofu Scramble Recipe | 6 Servings

Ingredients

- 1 block extra firm tofu

- 1/2 cup unsweetened soy milk plus more as needed for desired texture

- 1 small onion or 1/2 a large onion diced

- 1 tsp yellow mustard

- 1 tbsp sriracha

- 1 tsp maple syrup

- 1 tbsp pickled jalapeño juice

- 4 tbsp nutritional yeast

- 1 tsp garlic powder

- 1 tsp onion powder

- 1/2 tsp black pepper

- 1/2 tsp salt (black salt if on hand)

- 1/2 tsp smoked paprika

- 1/4 tsp turmeric

Directions:

1. Heat skillet over medium heat and sauté diced onions until translucent

2. Add in all of the seasonings and sauce for 1-2 minutes stirring constantly

3. Crumble in the extra firm tofu and Sauté for a few minutes until tofu is slightly browned

4. Next, in a small bowl, combine all of the wet ingredients and mix well, then add to the tofu and stir to combine

5. Sauté over medium heat, about 10 minutes -15 minutes, scraping the bottom of pan every few minutes

6. Then simmer on low for an additional few minutes until desired consistency is reached (using additional soymilk if needed)

7. Serve over sourdough toast, in a burrito, a breakfast sandwich, a taco or as is!
