Strawberry Banana Bread

This recipe is seriously the hands down, BEST, banana bread I have made since going vegan over 3 years ago. Thanks to my sister in law for inspiring me to make this recipe, so glad she did. You must give this one a try! :)

Strawberry Banana Bread Recipe | 8 Servings

Wet Ingredients

- 3 large bananas mashed

- 1 cup diced fresh strawberries

- 1/2 cup vegan buttermilk (1/2 lemon juiced plus soy milk)

- 1/2 cup maple syrup

- 2 Flax eggs (2 tbsp ground flax + 5.5 tbsp warm water)

- 1 tsp vanilla extract

Dry Ingredients

- 2 cups white whole wheat flour (spooned measuring method)

- 4 tbsp peanut butter powder (I use PB2 pure)

- 2 tsp baking powder

- 1 tsp baking soda

- 1/4 tsp cinnamon or pumpkin spice

- 1/2 tsp salt (add it to wet mixture)

Directions:

1. Preheat your oven to 375 degrees Fahrenheit

2. Line a loaf baking pan with parchment paper

3. Dice your strawberries

4. Make your vegan buttermilk by adding your 1/2 lemon juices to a measuring cup then pour the soy milk to the 1/2 cup mark, set aside

5. Combine your ground flax and water, set aside

6. In a large bowl, mash your banana until no chunks remain

7. Add your vegan buttermilk, flax egg, maple syrup, vanilla extract and salt to your mashed bananas

8. In a separate bowl, measure your flour using the spoon method, by spooning your flour into measuring cup until it heaps over, then level it off flat

9. Add your PB2, cinnamon, baking powder and baking soda, stir to combine well

10. Slowly add in your flour mix to the banana mix about half the mix at a time

11. Fold in the flour gently, when almost all of the flour is mixed, add in your diced strawberries and mix one final time

12. Do not over mix the batter, be gentle and be sure to fold the batter not stir

13. Add your mix to your lined baking pan and place on center rack of the oven

14. Immediately turn the heat down to 350 degrees Fahrenheit and set the timer for 1 hour

15. Remove from oven after the hour and set on a cooling rack for 10 mins

16. Remove the bread from the pan by pulling it out with the parchment paper

17. Set on cooling rack for another 10 minutes before removing the parchment paper

18. Finally let cool a final 10 mins before slicing

19. Be patient with the cooling, it is totally worth it. Now enjoy!
