Spinach & Artichoke Dip
Creamy, vegan spinach & artichoke dip, made with all whole foods. My go to recipe, it's quick, easy, delicious and most importantly nutritious!
Spinach & Artichoke Dip Recipe | 4-6 Servings
Ingredients
- 10 oz frozen chopped spinach or 3 cups of fresh spinach
- 1 can artichoke hearts in water
- 1/2 cup raw unsalted cashews
- 3/4 cup water
- 1/2 lemon
- 1 onion
- 4-5 cloves of garlic
- 2 tbsp nutritional yeast
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp red pepper flakes
- ground black pepper to taste
- toast/pita/chips for serving
Directions
1. Microwave the cashews in the water for 2-3 mins, set aside
2. Heat a skillet over medium heat
3. Dice your onion, mince your garlic, drain & chop your artichoke hearts
4. Add the onion to the pan and sauté until caramelized, use water as needed to sauté instead of oil
5. While the onion is sautéing, blend your cashew and water mixture in a high speed blender until smooth
6. Next to the pan. add the garlic, artichoke and spinach, cook until spinach is thawed
7. Add the seasonings and nutritional yeast, stir 1-2 mins
8. Stir in the cashew sauce, mix to combine
9. Squeeze in half of the lemon, stir well turn the heat up to med-high
10. Stir frequently, then reduce to a simmer with the lid for about 5 minutes
11. Once thickened to your desire, toast up some bread and enjoy!!!
