Raspberry Cheesecake Overnight Oats
This recipe is SO delicious and really easy to make! Quiche is traditionally made with eggs and cheese, but eggs and cheese are not very healthy so I have made a HEALTHY vegan quiche. It is packed with protein from the Tofu, Soy milk and Chickpea Flour! It's also filled with delicious veggies which can be interchanged for your preferences!
Raspberry Cheesecake Overnight Oats | 2 Servings
Ingredients
- 1 cup old fashioned oats (extra thick is nice)
- 1 1/2 cups soy milk (unsweetened)
- 4 tbsp kite hill cream cheese
- 1 tsp vanilla extract
- 1/2 lemon juiced
- 1 ripe banana
- 1 tbsp maple syrup or agave (optional)
- 2 tbsp ground flax
- pinch of salt
- fresh raspberries
- crushed walnuts
Directions:
1. Blend all of the ingredients (except the oats) together until smooth
2. Pour 1/2 cup of oats in a bowl with 1 cup of the cheesecake mix, mix well
3. Repeat step 2 for second serving
4. Top with fresh raspberries and optional nuts/granola
5. Set in the fridge overnight and enjoy!
