Raspberry Oat Bars
These Bars are the perfect treat, anytime of day...even for breakfast! They are packed full of oats, chickpeas, dates, bananas and raspberries, so plenty of fiber and nutrients. They will keep you feeling full and satisfied!
Raspberry Oat Bars Recipe | 9 Servings
Ingredients
Oat Bar
- 1 1/2 cups chickpeas (or 1 can of chickpeas)
- 1 1/2 cups oat flour
- 1 cup of oats
- 2 ripe bananas
- 6 pitted medjool dates
- 1/4 cup peanut butter powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- cinnamon to taste
Raspberry Topping
- 1.5-2 cups fresh or frozen raspberries
- 2 tbsp ground flax seed or ground chia seed
- 2 tbsp warm water
Directions:
1. Preheat oven to 350 degrees Fahrenheit
2. Blitz the chickpeas in a food processor or high speed blender until smooth
3. Add in the bananas and dates, blitz until well combined and slightly fluffy
4. Add in the remaining ingredients then blitz until a thick batter is achieved
5. Make your Raspberry topping by mashing all ingredients together until well mixed, set aside to thicken (thaw frozen strawberries for 2 minutes if necessary)
6. Spread oat batter into a nonstick baking pan (8x8 or 9x9), spread evenly, smooth with wet hands to make the top even
7. Top with the raspberry mixture, spread evenly across
8. Bake for 30 minutes, then cool for at least 10 mins before slicing! Enjoy!
