Plant Powered Protein Balls

These protein balls are the perfect snack to amp up your protein intake! They are made from all plant based ingredients and are super healthy. Each ball contains 8 grams of protein! WOW!

Plant Powered Protein Balls Recipe | 12 Servings

Ingredients

- 1 can of chickpeas, drained and rinsed

- 1 ripe banana

- 1-2 Tbsp Maple Syrup

- 1 tsp Vanilla Extract

- cinnamon to taste

- 1/2 tsp salt

- 4 Tbsp PB2 Powder

- 1/4 cup Pea Protein Powder

- 1/4 cup Brown Rice Protein Powder

- 1/4 cup oat flour

- 1-2 Tbsp Soymilk (or any plant milk)

- Vegan Choc Chips (Optional Add in) Coconut Coating

- 1/4 cup unsweetened shredded coconut flakes

- 1 tsp cinnamon

- 1/8 tsp salt

Directions

1. Rinse and drain the chickpeas, add to food processor and blend until smooth

2. Add the banana, maple syrup, vanilla extract, cinnamon and salt, blend until smooth

3. Add the PB2, oat flour and protein powders. Stir lightly then blend until a crumbly mixture is formed

4. Add it the soy milk while pulsing the mixture until a cookie dough like texture is achieved

5. Stir in the chocolate chips or other add ins

6. Combine the ingredients for the coconut coating

7. Scoop your balls with a cookie scooper or in about 2 tbsp sized balls. Roll in the palm of your hands until a ball is formed, then roll the balls in the coconut mixture

8. Keep in the fridge for up to a week. Enjoy!
