Peanut Butter Swirl Fudgy Brownies

This brownie recipe is my new go-to and for good reason! They are so utterly delicious, made from whole foods, and they are still pretty healthy!!! The secret ingredient is an avocado, which gives these brownies the melt in your mouth texture. Give these a try and you will not regret it!

Peanut Butter Swirl Fudgy Brownies | 9 Servings (extra thick brownies)

Ingredients

- 1 avocado

- 2 ripe bananas

- 1 cup soymilk

- 1 cup date sugar

- 1 cup almond flour

- 1 cup all purpose flour

- 1/2 cup cocoa powder

- 1 cup melted chocolate

- 1/2 cup boiling water

- 2 tsp vanilla (optional)

- 1 tbsp baking powder

- 1 tsp salt

- Cinnamon to taste (optional)

- 5 tbsp smooth peanut butter

Directions:

1. In a large mixing bowl, add the avocado and bananas, use a potato masher to mash them until very smooth.

2. Add the date sugar, plant milk, vanilla and salt. Mix well until combined

3. Preheat the oven to 375 degrees, microwave the 1/2 cup of water for 2-3 mins until boiling

4. While the water is microwaving, add the cocoa powder to the wet ingredients.

5. Add the boiling water to the cocoa powder and mix well until til combined

6. Microwave the 1 cup of chocolate chips in 30 second increments, stirring each time until melted

7. Add the melted chocolate to the mixture and combine well

8. Next add the almond flour and stir well. Then add the all purpose flour and baking powder fold together until no flour clumps are left

9. Pour the batter into a nonstick 9x9 pan, smooth the top of the batter, then dollop on 5 tbsp of peanut butter, spread apart

10. Swirl the peanut butter with a chopstick or toothpick, then bake for 30 minutes.

11. Allow to cool for atleast 20 minutes before slicing, enjoy the deliciousness!
