Peach Blueberry Cobbler

This cobbler recipe is to die for. It is so easy to make and you can feel guilt free eating it because it is made from all whole foods and only has two Tbsp of sweetener (maple syrup) in the whole recipe! This recipe is also super versatile, so you can use whatever fruit you have on hand.

Blueberry Peach Cobbler Recipe | 6 Servings

Ingredients

- 4 yellow peaches sliced

- 1 cup frozen wild blueberries

- 1 cup oat flour (or oats blended)

- 4 tbsp PB2 pure

- 1/4 cup old fashioned oats

- 3/4 cup soymilk unsweetened

- 1/2 lemon juiced

- 2-3 Tbsp crushed walnuts (for topping)

- 2 Tbsp maple syrup

- 1 Tbsp nutritional yeast

- 1 tsp vanilla extract

- 1 tsp cinnamon

- 1 tsp baking powder

- 1/4 tsp salt

Directions:

1. Combine your soymilk with the lemon juice, set aside

2. If necessary, make your oat flour by blending in a high speed blender until a fine powder

3. Add your oat flour to a bowl along with the other dry ingredients, stir to combine

4. Add your vanilla extract and maple syrup to your soymilk/lemon mixture, stir to combine

5. Pour your wet ingredients to the dry ingredients, stir to combine, lumps are okay

6. Pour your diced peaches and blueberries into a nonstick pan and spread evenly covering the bottom of the pan completely

7. Pour your cobbler batter over the fruit, leave the edges exposed so the fruit can bubble up

8. Crush the walnuts and sprinkle a thin layer across the top of the cobbler and add some cinnamon on top

9. Bake at 375 degrees Fahrenheit for 25 minutes or until golden brown. 10. Let cool slightly before serving.
