My Go-To Tacos

My Go-To Tacos | 4 Servings
Ingredients
Taco Ground Recipe Ingredients
- 1 head of cauliflower
- 1/2 cup walnuts
- 8-12oz portobello mushrooms
- 1 packet of taco seasoning
- 1/2 cup salsa
- 2 tbsp soy sauce/coconut aminos/tamari (optional)
Chipotle Queso Recipe Ingredients
- 1 pack of extra firm tofu
- 1/4 cup unsweetened plant milk
- 1/4 cup pickled jalapeno juice
- 1/2 lemon juiced
- 2 chipotle peppers (from a can)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp turmeric
- 1/2 tsp salt
- 1/2 tsp smoked paprika
- 1/4 cup nutritional yeast
Refried Beans Recipe Ingredients
- 1lb 13 oz can of Pinto Beans (or 2 regular size)
Directions :
Taco Grounds
1. Preheat oven to 400 degrees Fahrenheit
2. Pulverize the walnuts in your food processor first, add to large mixing bowl
3. Then tear off the cauliflower into chunks and add to the food processor, pulse until it resembles the size of rice, add to bowl
4. Lastly add the mushrooms to the food processor, pulse until it resembles the size of rice, add to bowl
5. Add the taco seasoning packet, salsa and optional soy sauce to the bowl with the walnuts, cauliflower and mushrooms, mix well
6. Spread the mixture across a lined baking sheet, spread evenly but leave the top rough with some texture so it can get nice and crispy
7. Bake for 30 minutes, then flip and mix it all up and bake for another 30 minutes
Chipotle Queso:
1. Drain the liquid from the tofu, then add to blender by tearing off into chunks
2. Add the remaining ingredients and blend until smooth, stop and scrape down when needed
Refried Beans:
1. Add the can of beans to a large pot over medium heat, liquids and all
2. Bring to a boil for 10 mins then mash beans with a potato masher
3. Turn down to low, cover with a lid, but stirring frequently
4. Ideally simmer for 30 minutes, they will thicken nicely!
