Mini Zucchini Pizzas
These mini zucchini pizzas are the PERFECT party food or appetizer that will be a crowd pleaser! They are super easy to make and only require a few ingredients. See below how to make them for yourself!
Mini Zucchini Pizzas | 1-2 Servings
Ingredients
- 1 Large Zucchini sliced into 1/4 inch rounds
- Sprinkle of salt
- 1/2 cup Whole Wheat Panko Bread Crumbs
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Italian Seasoning
- 1/4 tsp Red Pepper Flakes
- 1 small tin can of tomato sauce
- Miyoko's pourable mozzarella cheese - Fresh basil
Directions
1. Slice your zucchini into 1/4 inch rounds, lightly salt and allow to rest while preparing the breadcrumb mixture
2. Mix the breadcrumbs, onion and garlic powder, red pepper flakes and Italian seasonings together in a shallow bowl
3. Cover each zucchini round in the breadcrumb mixture, pile a little extra on top, it should bread around 15 zucchini rounds
4. Bake on a lined baking sheet at 425 degrees for about 10-12 minutes or until nicely browned
5. Top each zucchini round with about a tbsp. of tomato sauce, and a tsp or so of the Miyoko's pourable mozzarella cheese (you could also make your own cashew cheese and use that)
6. Bake for another 10 minutes
7. Top with some fresh chopped basil and enjoy, if not serving immediately be sure to transfer them to a cooling rack so that the breadcrumbs stay crispy!
