Marinated Tofu Poke Bowl
In this recipe I show you how to make a delicious, marinated Tofu Poke Bowl. This recipe was inspired by a restaurant I went to while home visiting in NC. It is super healthy, tasty and refreshing for summer!
Marinated Tofu Poke Bowl | 2-3 Servings
Ingredients
Tofu Marinade Ingredients:
- 1 Block Super or Extra Firm Tofu
- 1/4 Cup Soy Sauce/tamari/coconut aminos
- 2 Tbsp Rice Vinegar
- 2 Tbsp Maple Syrup
- 1 Tbsp Lemon or Lime Juice
- 1 Tsp Sesame Oil
- 1 Tsp Sriracha
Poke Bowl Ingredients: (the amounts are up to you)
- Shredded Carrot
- Diced Cucumber
- Diced Mango
- Diced Avocado
- Frozen Shelled Edamame
- Shredded Spring Mix or Lettuce
- Steamed Sushi or Sticky Rice
Directions :
1. Prepare the tofu marinade by mixing all of the ingredients together, then add to a large dish
2. Dice the tofu into bite size pieces and soak in the marinade, the longer the better
3. Prepare the edamame and the sushi rice (I used shortcut ingredients, so just had to microwave them)
4. Then prepare all of the veggies by dicing them small and shredding the carrot
5. Build your bowls, top with the leftover tofu marinade and black sesame seeds, enjoy!
