Asian Lettuce Wraps

These lettuce wraps are so EASY and so DELISH! You can make them in under 20 minutes and are such a healthy lunch/appetizer option. They will leave you feeling refreshed and satisfied!

Asian Lettuce Wraps Recipe | 4-6 Servings

Ingredients

TVP "meat"

- 1 head of Romain Lettuce

- 1 cup Textured Vegetable Protein (TVP)

- 1 3/4 cup hot water

- 1/2 onion diced

- 1/4 cup walnuts, pulsed

- 1/2 head of a small cabbage diced

- 1 large or 2 medium carrots diced

- 1-1 1/2 cups diced mushrooms

- 1 tbsp minced garlic

- 1 tbsp minced ginger

- 1 tbsp miso paste

- 2 tbsp soy sauce

- 1 tsp toasted sesame oil

- 2 tbsp rice vinegar

- 1 tbsp sriracha

- 1 tbsp tahini

Peanut Sauce

- 3-4 tbsp PB2

- 1-2 tbsp water

- 1 tsp sriracha

- 1 tbsp maple syrup

- 1 tbsp rice vinegar

- 1 tbsp soy sauce

Directions

1. Add your TVP to the hot water, set aside

2. Dice onion and sauté over medium heat, adding water 1 tbsp at a time to deglaze pan

3. Add walnuts to food processor or pestle and mortar and pulse until it becomes a rough powder, set aside in a bowl

4. In the food processor, pulse the cabbage, carrot and mushroom then add to the sautéed onions

5. Continue to cook over medium heat until veggies are softened

6. Add the TVP, walnuts, minced garlic and ginger, continue to cook down 5 mins

7. Mix together the wet ingredients and add to the TVP mixture, cook down another 5-10 mins

8. Make the peanut sauce, adjust the amounts of water and PB2 until a drizzling consistency is achieved

9. Wash your lettuce cups in cold water

10. Add the TVP "meat" to the lettuce cups and drizzle on the peanut sauce, sesame seeds and optional sriracha
