Lemon Herb Couscous with Asparagus & Crispy Tofu Recipe | 4 Servings
Ingredients
- 1 10 oz package of original couscous
- 2 cups veggie broth (1 tsp better than bouillon plus water) - 1/4 cup pine nuts
- 1 bunch of asparagus
- 1 lemon (1/ tsp zest and juices)
- 1 tbsp minced garlic Seasonings for Couscous
- 2 tbsp nutritional yeast
- 1/2 tsp salt
- 1 tsp freeze dried dill
- 1 tsp dried parsley
- 1/4 tsp red pepper flakes
- 1 tsp onion powder
- 1/2 tsp ground coriander Crispy Tofu
- 1 package super firm tofu
- 1/4 cup coconut aminos or soy sauce
- 1 tsp garlic powder
Directions:
1. Add veggie broth to a large pot and bring to a boil
2. Chop the tofu into small cubes and marinate with coconut aminos and garlic powder, add to air fryer and cook for 10 mins at 400 degrees
3. Once the veggie broth is boiling, add in the couscous, turn off heat and cover
4. Toast the pine nuts in a saute pan over medium-low heat, stirring for 2 minutes
5. Add pine nuts to a bowl and set aside
6. Wash and chop your asparagus into 1 inch pieces
7. Add the asparagus to the saute pan over medium heat, add 2 tbsp water and cook for 4-5 mins stirring occasionally
8. Measure out all of the seasonings for the couscous
9. Add the seasonings to the asparagus and stir well
10. Fluff up the couscous with a fork then mix in the asparagus mixture
11. Plate the couscous on the bottom, top with the crispy tofu, some lemon juice and creamy tahini! Enjoy!
