Japanese Sweet Potato Blondies!!!
These blondies will satisfy your sweet tooth, but you won't have to feel guilty eating them....because they are made from Japanese sweet potatoes and other whole foods! They are seriously so delicious, so moist and super easy to make!
Japanese Sweet Potato Blondies Recipe | 8 Servings
Ingredients
- 1 1/2 Cups cooked Japanese Sweet Potato (I roast mine in halves)
- 1-1 & 1/4 Cups all purpose flour (use more 1 tbsp at a time if needed)
- 1 ripe banana
- 1/4 Cup soymilk
- 1 tbsp maple syrup
- 1 tsp apple cider vinegar
- 6 tbsp peanut butter powder
- 1 tsp baking powder
- 1/4 tsp baking soda
- cinnamon to taste
- 1/2 cup vegan chocolate chips
Directions:
1. Preheat oven to 350 degrees Fahrenheit
2. Add the apple cider vinegar to the soymilk, set aside
3. Add your cooked sweet potato to a food processor with the banana and soymilk mixture
4. Process until whipped texture and super smooth, about 1-2 mins
5. Add in all of the dry ingredients
6. Process until flour is well mixed (don't over mix, just pulse)
7. Fold in the chocolate chips
8. Add to your nonstick baking pan (i used an 8x8), smooth evenly
9. Bake for 25 mins 10. Let cool (or not) slice, and enjoy!
