Crispy Tofu Udon Noodle Stir Fry

Perfectly crispy tofu meets perfectly seasoned sauce, and NOODLES?! This recipe is very easy to prepare and requires common ingredients that you probably already have on hand! It can be prepared with any noodle, however the Udon noodles are the best, in my opinion!

Crispy Tofu Udon Noodle Stir Fry | 2 Servings

Sauce ingredients

- 1 tbsp tamari (or soy sauce/coconut aminos)

- 1 tbsp rice vinegar (or mirin)

- 1 tbsp maple syrup (or agave)

- 1 tsp sriracha (or other hot sauce)

- 2 tsp minced garlic

- 2 tbsp cold water

- 1 tbsp tahini (or other nut butter)

- 1 tsp cornstarch Crispy Tofu

- 1/2 block extra firm or super firm tofu (tore into nugget size chunks)

- 1-2 tsp cornstarch

Udon Noodle Stir Fry ingredients

- 1/2 onion thinly sliced

- 1 cup sliced mushrooms

- 1/2 bell pepper julienned

- 1/2 large zucchini julienned

- 1 large carrot grated or thinly sliced

- 2 servings of frozen udon noodles thawed

- 1 tsp toasted sesame oil for cooking

Optional Toppings

- red pepper flakes

- sesame seeds

- green onion

Directions:

1. Mix together all of the ingredients for the sauce, whisk well and set aside

2. Prepare all of the veggies by thinly slicing or grating, set aside

3. Prepare the tofu by breaking of the tofu into bite sized pieces with rough edges, coat in enough cornstarch to cover the tofu and mix well

4. Cook tofu in air fryer for about 10-12 mins, tossing halfway

5. Heat up a wok or large stir-fry pan over medium heat, as well as bring a large pot of water to a boil

6. Add the sesame oil to the wok and add the veggies, saute for about 10 minutes or until tender

7. Once the pot of water is boiling add the frozen udon noodles and turn off heat, after 2 minutes drain and rinse the noodles in cold water

8. Once the tofu is ready, add the tofu to the veggies along with the prepared sauce, stir to combine

9. Add the udon noodles to the veggies and tofu, combine well

10. Serve the noodle stir fry with red pepper flakes, sesame seeds and green onions, enjoy!
