Chocolate Chip Pancakes
This pancake recipe is super healthy, vegan and made without any oil! The recipe is very versatile, you can add anything to these pancakes that your heart desires (mine wanted chocolate chips). Make these for a weekend breakfast or brunch and freeze the extras for easy weekday meal prep!
Chocolate Chip Pancakes | 12 Servings
Ingredients
- 1 ripe banana mashed
- 1 cup soy milk
- 1/2 cup oat flour
- 1/2 cup all purpose flour
- 1 tbsp apple cider vinegar
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
Directions:
1. Add the apple cider vinegar to the soy milk, set aside for 2-3 mins.
2. Mash your banana well, then add in the soy milk mixture.
3. Add in the salt, cinnamon, and baking powder, mix well.
4. Lightly stir in the flours. Mix to combine.
5. Add additional flour/milk if needed (1 tbsp at a time).
6. Let batter rest for 5-10 mins while heating a non stick pan over low-medium heat (depending on pan).
7. Cook pancakes for 2-3 mins each side, or until you see bubbles in the middle.
8. Serve with fresh fruit and a bit of maple syrup, enjoy!
