Chickpea Salad Wraps
Are you in need of a quick and easy lunch recipe that you can meal prep for a grab n go meal? I have the answer for you! Make my easy chickpea salad wraps and you will have a delicious and nutritious lunch that would be perfect to take to work or even to take on the road while traveling.
Chickpea Salad Wraps | 3 Servings (1 Cup)
Ingredients
- 1 can of rinsed and drained chickpeas
- 1/3 cup dill pickles
- 1/2 cup celery
- 1 cup silken tofu
- 1 tbsp apple cider vinegar
- 1 tsp minced garlic
- 1 tbsp fresh or freeze dried dill
- 1 tsp maple syrup
- 1/4 tsp salt
- black pepper to taste
Optional Wrap + Add Ins
- 3 Large tortilla wraps (burrito size preferred)
- thinly sliced carrots
- sliced cucumbers
- romaine lettuce
Directions :
1. Pulse everything (except the wraps, and optional add ins) in a food processor until everything is mixed well and chopped into small pieces
2. Roll up in your favorite burrito wrap with some additional crunchy veggies like carrots or cucumber and enjoy!
Note: They will last in the fridge for 3-4 days.
