15-Minute Chickpea Stir Fry

15-Minute Chickpea Stir Fry Recipe | 3-4 Servings
Stir Fry Ingredients
- 2 cans of chickpeas (rinsed and drained)
- 24 oz of frozen vegetables (I used Whole Foods Stir Fry Blend)
- 20 oz pre cooked rice (I used Whole Foods frozen brown rice)
Sauce Ingredients
- 2 tbsp rice vinegar
- 1 tsp ground ginger
- 2 tsp minced garlic or 1 tsp garlic powder
- 1 tbsp sriracha or other hot sauce
- 1 tbsp toasted sesame seed oil
- 4 tbsp coconut aminos or soy sauce
- 1/4 cup maple syrup
- 2 tsp corn starch
Directions:
1. Heat up two pans over medium heat
2. Rinse and drain chickpeas, add to one pan
3. Combine all of the sauce ingredients in a bowl, mix really well then add to the pan of chickpeas
4. Bring chickpeas to a boil, then reduce to low and let simmer 5. Add your frozen veggies to the other pan and stir fry with water as need until fully cooked
6. Add your rice to the microwave and cook according to the package
7. Once the chickpeas have thicken and frozen veggies are cooked, plate everything up
8. Top with sriracha and sesame seeds and enjoy!
