Blueberry Muffin Baked Oats
If you love blueberry muffins but want a quicker and healthier way of eating them, then make this recipe! Baked oats are really good for you but more importantly they taste delicious, feel free to top with some nut butter or maple syrup!
Blueberry Muffin Baked Oats | 2 Servings
Ingredients
- 1 cup old fashioned oats (extra thick is nice)
- 1/2 cup soymilk (unsweetened)
- 1-2 tbsp lemon juice
- 1 ripe banana
- 2 tsp maple syrup/agave/date sugar (optional)
- 1 tsp vanilla extract
- 1/8 tsp of salt - as much cinnamon as you like
- 2 tbsp PB2 Pure
- 1/2 cup fresh or frozen blueberries
Directions:
1. Preheat oven to 375 degrees Fahrenheit
2. Blend all of the ingredients together until smooth, scrape down sides as needed
3. Line a small square pan (8x8) with parchment paper
4. Spread batter evenly into pan and top with blueberries
5. Put into oven and turn down temp to 350, bake for 20 mins
6. Allow to cool and slice into 4 pieces
7. Enjoy with some maple syrup or nut butter!
