Apple Spice Crumb Cake
This apple spice crumb cake screams fall! It is filled with warm apple spices, topped with a delicious walnut crumb, and finished with a divine date glaze! You need this cake in your life, trust me.
Apple Spice Crumb Cake Recipe | 9 Servings
Ingredients
- 2 cups oat flour + 3tbsp (separated)
- 1 cup unsweetened soymilk
- 1 cup apple cider
- 1 tbsp ACV
- 1/2 cup date sugar
- 2 bananas
- 1 small Japanese sweet potato
- 1 tsp Apple spice
- 1 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 medium size fuji, honeycrisp (sweet and crunchy apple)
- 1/2 cup walnuts
Date Sugar Glaze
- 1/4 cup date sugar
- 2-3 tbsp oat or soymilk
Directions:
1. Roast the Japanese sweet potato (preferably the day before) at 400 degrees for about 40 minutes. Chill in the fridge if made the day before or allow to cool if the day of.
2. Preheat oven to 350, in a large mixing bowl, mash the Japanese sweet potato and bananas until very smooth and fluffy
3. Add in the ACV, then the soymilk. Wait a few miniges then add the apple cider and the date sugar, mix well
4. Add all of the ingredients except the oat flour and chopped apple, mix very well
5. Add in the oat flour, one cup at a time, fold together (be sure to measure correctly!) reserve the 3 tbsp
6. Finely dice your medium size apple and sprinkle the 3tbsp of oat flour over the apple then fold into the batter
7. Line a square baking pan with parchment paper, add the batter and spread evenly.
8. Lastly, add the walnuts to the food processor and blitz until a fine powder, sprinkle the walnuts on top of the batter in a thin layer
9. Bake for 40 minutes! Then allow to cool on a rack for atleast 30 minutes
10. Optionally, make the date sugar glaze to drizzle on top by mixing the sugar and milk until smooth and drizzly, and enjoy!!!
